Chocco Custard

Awesome chocolate custard to be relished in just 15-30 mins...!

Below is the quick and easy method to prepare the dish...

Ingredients:
  • 1/2 litre - condensed milk
  • 1 1/2 tsp - cocoa powder
  • 2-3 tbsp - custard powder
  • 5-6 tbsp - sugar
  • Sliced Nuts like almond, pista, cashew - few

Method:

  • Mix all the ingredients without lumps and boil on a medium flame.
  • When the mixture thickness, remove from fire and leave at room temperature.
  • Spoon out into individual bowls and spread the nuts on top of it.
  • Refrigerate for an hour.
  • When the custard is set, serve chilled.

Delicious chocolate recipe is ready in minutes..!!

Vegetable Fried Rice

Ingredients:

  • 1 cup basmati rice
  • finely chopped mixed vegetables - 1 cup (vegetables like carrot, cabbage, capsicum, green peas can be included)
  • Ginger - 1 tsp finely chopped
  • Garlic - 1 tsp fineley chopped
  • Green Chillies - 3-4 nos chopped or slight length wise
  • Pepper powder - 1 tsp
  • Pattai - 1 inch
  • salt - as needed
  • Cashews - few

Method:

  1. First, in a pressure cooker , heat a tsp of oil or ghee. Fry the pattai in the oil. Add the basmati rice, salt and fry for few seconds in oil.
    Then add 1.5 cups of water and close the lid and cook the rice as usual
  2. In a pan, heat oil. Fry the cashews in it. Then add the green chillies, ginger and garlic and fry for few minutes.
  3. Now add the chopped vegetables, salt and in high flame, fry them. Don't add water to cook the veggies. Fry them for 5 - 10 minutes. Make sure u don't burn them.
  4. Now add the pepper powder and turn off the gas
  5. Mix this fried veggies into the cooked rice and mix well.
Vegetable Fried Rice is ready...!! Serve them with a vegetable kuruma.

Quick Bread Omlette

Ingredients:

  • Whole wheat bread / any kind of bread  - 3 pieces
  • Egg - 2
  • Chilli powder - 1 tsp
  • Salt - as needed

Method:

  • Cut the bread into to diagonal wise, so that you get triangle pieces
  • In a bowl, mix the egg with salt and chilli powder
  • Heat the dosa tawa, and dip the bread piece in the egg mixer and place it in the tawa
  • Flip both sides and serve
Easy and healthy morning breakfast ready..!!

Paneer Matar Masala


In this Season, we get lot of fresh green peas at cheaper rate...!!
So i try to add fresh peas in whatever dish i could... :)

Ingredients:

  • Fresh green peas   - 1 cup
  • Paneer                  - 1 cup ( cubed)
  • Big Onion              - 2 ( chopped length wise)
  • Big onion               -1
  • Tomato                  - 2 (chopped finely)
  • Kasa kasa             - 1 tsp
  • Pattai                    - 1 inch piece
  • Jeera                     - 1 tsp
  • Ginger garlic paste -  1 1/2 tsp
  • Turmeric powder    - 1/2 tsp
  • Chilli powder         - 1/2 tsp
  • Chicken Masala    - 1 tsp
  • Corriander powder  - 1 tsp
  • Garam masala       - 1 tsp
  • Corriander leaves   - few chopped

Method:

  1. If the paneer is bought from store, immerse the packet in hot water for 5 minutes, so that it becomes soft. Then cube the paneer.
  2. Heat a pan, add few drops of oil. Then fry the paneer cubes in the pan until slight brown. Keep the fried paneer aside.
  3. In a bowl of hot water, put the peas and allow it soak until it is half cooked or better pressure cook the peas for 1-2 whistle and keep it aside
  4. Grind 1 big onion, kasa kasa and pattai and keep it aside.
  5. In a kadai, heat oil. Add jeera. Once it splutters add the chopped onions and fry until golden brown.
  6. Add the ginger garlic paste and fry well. Add the chopped tomatoes and fry until tomatoes are cooked well
  7. Add the turmeric powder, garam masala, corriander powder, chilli powder, chicken masala and fry for 2 minutes
  8. Now add enough water to make a gravy lconsistency
  9. Cover tha pan with lid and allow it cook for 3-5 minutes
  10. Once it starts boiling, add the cooked peas and fried paneer cubes and mix well and cook by closing the lid. Allow it to for 5 minutes
  11. Now add the chopped coriander leaves and serve hot

Delicious panner matar masala is ready..This goes well with chapathi/Roti/ any pulav

Channa Masala

Ingredients:
  • Chickpeas/Kabuli Chana - 1 cup, soaked in water for 8 hours or overnight
  • Ginger  - 2 tsp, grated
  • Garlic - 2 tsp, grated
  • Onion - 1 cup, chopped
  • Tomato - 1 cup, grated
  • Green Chillies - 2, sliced
  • Turmeric Powder - 1/2 tsp
  • Coriander Powder - 1 tblsp
  • Cumin Powder - 1 tblsp
  • Red Chilli Powder - 1/2 tsp
  • Garama Masala Powder - 1/2 tsp
  • Coriander Leaves - 2 tblsp
  • Ginger - 1/2 inch piece, julienned
  • Vegetable Oil - 2 tblsp
  • Salt as per taste
Method:

1. Cook the chana till soft and set aside.
2. In 2 tblsp hot oil fry onions till pink.
3. Add grated garlic and ginger.
4. Cook for 2 minutes in low heat.
5. Add grated tomatoes, coriander powder, cumin powder, turmeric powder and chilli powder.
6. Saute over low heat till the oil separates.
7. Add chana, 1 to 2 cups of water, salt and half of the coriander leaves.
8. Simmer uncovered until the liquid has been absorbed.
9. Add a pinch of garam masala.
10. Sprinkle the remaining garam masala, coriander leaves and shredded ginger.
11. Serve hot.

Aloo Papdi Chaat

Real Aloo papdi chaat will have a actual north indian touch. But this recipe is moderated to our taste and with the ingredients which we have normally in our kitchen. Behind this invention, there is a small story..
We had lots of thattu vadai  ( a south indian snack) at home prepared by mom. Bored of eating those as such. Then this chaat variety hits..!! Its more tasty when mixed with potato..

Ingredients:

  • Potato - 3  (boiled and smashed)
  • Thattu vadai - 10-12 nos (crushed into small pieces)
  • Onion - 1 (chopped finely)
  • Green chill - 3 (chopped finely)
  • Garam masala  - 1 tsp
  • Chilli powder - 1 1/2 tsp
  • Corriander Leaves  - few (chopped finely)
  • Salt - as needed
Method:
  • Mix all the above ingredients well and serve..!!! 
Tasty allo papdi chaat ready... :)
Instead of thattu vadai, can add mixer or kara sev too...


Andhra Spicy Chilli Chutney

This chutney is andhra special and i learnt it from my hubby's friend..!! It is also called as kara chutney in our Tamilnadu side...
It can be prepared in minutes and a good side dish for dosa.. Also it can be spread on egg dosa while cooking.. It gives a different flavor to egg dosa...

Recipe for chutney

Ingredients:

Big onion - 1
Garlic - 4
Red Chillies deseeded - 4 or 5 depending on the chilli
Tamarind - small amt
Salt- as needed

Method:
  1. Heat oil in a pan and add mustard
  2. Add the chopped onions, chillies, garlic, salt and saute for few minutes till raw smell goes off. May be for 3 minutes
  3. Cool and grind it in the mixer.
Hint:
  • Spicy Dosa:  Pour a lad of batter in dosa pan, spread this chutney one layer, then idly podi one layer and cover and cook. Delicious hot dosa ready..!!
  • Spicy Egg Dosa:  Pour a lad of batter in dosa pan. Spread the beaten egg on the dosa as a layer, then spread this chutney as well. Make sure the egg and chutney are mixed. Allow to cook on one side and flip to the other and serve hot..!!

Spicy Mushroom Curry

Ingredients :

  1. Mushroom's - 200gms
  2. Onion - 1 ( of Medium size, Finely Chopped)
  3. Tomatoes - 2 (Chopped)
  4. Dry Red Chilli - 2
  5. Pepper Powder - 1 tsp
  6. Turmeric Powder - a pinch
  7. Corriander Powder - 2 tsp
  8. Curry Leaves - 5
  9. Corriander Leaves Finely Chopped - 2 tsp
  10. Mustard - 1/2 tsp
  11. Sombu - 1/4 tsp
  12. Oil - 2 tbsp
To Grind:
  1. Garlic - 5 pod's
  2. Ginger - 1/2 inch size
  3. Green Chilli - 1
Recipe:

1. Wash the Mushroom's and Let them dry. You can also wipe them with a clean cloth.
3. Chop the Onion's and Tomatoe's finely.
4. Heat the Oil in a  Pan. Add Mustard, when it pop's, add sombu, Red chilli's and the minced ginger-garlic-green chilli pieces. Saute them, till the raw smell goes off.
5. Add Onion's and fry them. add tomatoe's and fry along with onion's.
6. Add Turmeric Powder, Salt, Corriander powder and Pepper Powder to the
onion, Tomato mix and mix them well.
7. Add the Mushroom's, and mix well with the masala. Mushroom's get cooked in 2-3
minutes. add Curry leaves and Leave the pan in slow flame, till the oil seperate's from
the masala. Garnish with Corriander Leaves.

Dhal Paalak

Dhal Palak goes well with steamed rice..


Servings - 2 nos

Ingredients:

1. Pasi payiru - 1/2 cup
2. garlic - 5
3. Jeera - 1 tsp
4. Curry leaf - few
5. Paalak spinach - 1 bunch
6. Gree chillies - 2
7. Onion - 1 chopped

Recipe :
  •  In a pressure cooker, heat some oil.
  • Add the jeera, onion, green chillies, salt and saute for few minutes.
  • Add the garlic pods and fry well.
  • Add the dhaal and mix well
  • Add 1 1/2 cup water to it and close the cooker lid
  • Leave for 2-3 whistles and open the lid
  • Now add the chopped Paalak and allow it to cook for 5 mins.
  • Cool it and blend them and serve with hot rice.
Enjoy the richness of paalak with dhaal...!!

Tomato Macroni

I have always hated eating macroni earlier, but when i have gone to my sis-in law home, she prepared this delicious macroni and truely i cant stop eating it since then.. Its my husband's favourite dish...!!!
Try this out and am sure you too will like it...

Ingredients:

1. Macroni -  1 cup
2. small onion - 1 cup chopped
3. Tomatoes - 2 chopped finely
4. Garam masala - 1 tsp
5. chilli powder - 1 tsp
6. salt as needed
7. Soy sauce - 2 tsp
8. Curry leaf

Recipe:
  • Heat water in a pan. allow it to boil. add the macroni to the boiling water and cook for 5 mins. Make sure the macroni is soft nad cooked well.. You can add few drops of oil to the boiling water so that the macroni does not stick together
  • Then strain the hot water and pour cold/plain water to the macroni and strain again and spread it in a plate. allow it to cool.
  • In a pan, add oil. after it is hot, add the chopped onionsand salt. Saute it for few minutes
  • Then add the chopped tomatoes, curry leaves and fry for few minutes
  • Now add the garam masala and chilli powder and mix well.
  • Add the macroni to it and keep in simmer for few minutes so that all the masala is blended with the macroni
  • Now add the soy sauce and mix well..
Hot and Tasy Macroni is ready...!!!

Ragi Roti

Try this Ragi roti which is tastier and healthy..!!!

Ingredients:
  1.  Ragi floor - 1 cup
  2. Wheat floor - 1/2 cup
  3. green chilli - 3-4
  4. Corriander leaf - few
  5. salt - as needed
  6. onion - 2 chopped
  7. Cumin seeds - 1 tsp
Method:

1. Grind the green chillies and cumin seeds by adding little water
2. Add this paste to the floor and add the chopped onion and corriander leaves, salt.
3. Add water and mix well and make it to the chappathi dough consistency
4. heat the dosa griddle
5. Take a some amount of dough and spread it on the tawa with fingers
6. Before spreading , dip your fingers in water so that it will be easy to spread it on the tawa and the dough will not stick in your hand.
7. Now cook on both sides like chappathi

The Ragi roti is ready..!!
It goes well with coconut chutney...

Raggi Pakkoda

Its been rare including ragi in our diet though its of rich in Fibre and the least on Fat... Its also a rich source of calcium...
Lets include Ragi in our diet altleast once in a week....!!

Bored of regular vazhakkai/onion bajjis...? Try this new tasty healthy dish...!!

Ingredients for Ragi Pakkoda:

1. Ragi Floor - 1 cup
2. Wheat floor - 1/2 cup
3. Cumin seeds - 2 tsp
4. Red chillies / Green chillies - 3-4 nos chopped
5. Salt
6. Corriander leaves - chopped
7. Onion - 2 chopped

Method:

1. In  a bowl, mix all the above ingredients well... Sprinkle less water to the floor and mix..
2. Make sure it just got blended with water and a binding s made. Dont add more water and make like chappathi dough..
3. Heat 2 tsp of oil and mix it to the above.
4. The more dry it is the more crispy..
5. Heat oil in pan to fry. After the oil is hot, take small small pinch from the dough and fry n the oil.
6. Tast pakkoda ready...

Bread Bajji

This is as simple as that.. Quick enough to prepare...

Recipe:

  • If you have the ready mix bajji bonda, then just prepare the bajji bonda mix dough, by mixing water to the floor and dilute to the idly floor consistency
  • And toast the bread slices and cut into two pieces.
  • Dip the sliced toast bread in the mixed dough and deep fry in oil.
Delicious bajji ready..!!1

For those who do not have the ready made bajji mix, below is the method to prepare bajji floor

1. Kadalai mavu - 1 cup
2. Rice floor - 3 tbsp
3. Chilli powder - 1 tsp (as per taste)
4. Salt - as needed
5. Perungayam - 1 pinch

Mix all the above and prepare the dough...

Pepper Chicken Fry

Awsome to taste chicken with pepper... I just invented this recipe when caught up with severe cold.. :) Yeah..!! Its really hot that it hits your buds with the taste of chicken and pepper.


Ingredients:

  1. Chicken - 1 kg, cut into small pieces
  2. Dry red chillies - 8-10 nos (chopped)
  3. Big Onion - 2 (chopped)
  4. Tomato - 1 (chopped)
  5. Pepper corns - 2 tbsp
  6. Cinnamon stick - 1 inch
  7. Kasa kasa - 1tbsp
  8. Cumin- 1 tbsp
  9. Chilli powder - 1 tsp (as per taste)
  10. Turmeric powder - 1 tsp
  11. Salt (as needed)
  12. Ginger garlic paste - 1 tsp
  13. Oil
Recipe:
  • Grind kasa-kasa, cinnamon and pepper and keep the dry powder aside
  • In a pan, heat oil, add the cumin seeds. let it roast for few seconds and add the onion and saute for few minutes.
  • Add the tomato , ginger garlic paste and  fry for few minutes.
  • Now add the grounded powder, turmeric powder add the chilli powder if you need it more hot.
  • Add salt as per needed. 
  • Add the chicken pieces and cook by closing the pan with lid. Just sprinkle less water as the chicken itself will let more water.
  • Allow the chicken to cook well
  • If there is excess water, cook in open to get a dry chicken
Enjoy the rain or cold with this hot pepper chicken...!!!

Soy Pepper Masala

As all say Soya is really good for health.. But the smell of soya always prevented me from eating it.. This gravy is really delicious and on eating the chunks, the spicy juice is what hits our taste buds and not the raw flavor of soya...

Ingredients:

1. Small soya chunks - 1 cups
2. Onion -2
3. Tomatoes -3
4. Ginger garlic paste 2 tsp
5. Turmeric powder 1/4 tsp
6. Chilli powder - 2 tsp
7. Coriander powder - 1 tsp
8. Cumin seeds - 1.5 tsp
9. Pepper- 1.5 tsp
10.Oil
11.Cinnamon stick-1,
12. fennel seeds -1/2 tsp
12.Curry leaves .
13.Salt as per requirement.

Recipe:

  • Soak soy chunks in the hot water for 15 minutes.squeeze out the water from soy chunks and again wash it in normal water . squeeze out the water from soy chunks keep it aside.
  • Soak cumin seeds and pepper and grind it together.
  • Heat a oil in a kadai and put cinnamon ,fennel seeds. saute onion for 5 minutes. add ginger garlic paste.Add tomatoes after few minutes. Add salt and then chilli powder,coriander powder and turmeric powder.
  • After the raw smell goes add some water. Few minutes later add the soy chunks and let it boil for some time.
  • Now add the ground cumin and pepper paste. Let it get boiled for few minutes and garnish it with curry leaves.
Serve hot with roti, dosas etc.
